Moroccan hospitality runs on two things: sweets and tea. This workshop is dedicated entirely to both — a lighter, shorter counterpart to our savory cooking classes, built around the pastries and tea ritual that define how Moroccans welcome guests into their homes.
You’ll hand-fold almond and honey briouats — delicate filo pastry parcels that are fried until crisp — and mix and bake a batch of ghriba, the crackled Moroccan shortbread cookies found at nearly every celebration. Alongside the baking, your host will walk you through the Moroccan tea ceremony: how the tea is brewed with fresh mint and sugar, and the specific technique of pouring from height to create a light foam on top of the glass, a small but meaningful detail of Moroccan hospitality.
This workshop suits travelers who want a shorter, gentler introduction to Moroccan food culture, families with children, or anyone pairing it with one of our savory cooking classes for a fuller day of cooking. It ends, as any proper Moroccan visit should, with a tray of tea and sweets shared together.
